Ingredients
To make 4 wraps:
- 2 cups chopped grilled chicken any cooked, seasoned chicken
- 1 cup finely diced cucumber
- 2 cups asian slaw mix with carrots
- 2 avocados
- 1/2 cup Thai peanut sauce
- 1/4 cup chopped salted peanuts more if desired
- 4 flour tortillas
To make 1 wrap:
- 1/2 cup chopped grilled chicken (80g) any cooked, seasoned chicken
- 1/4 cup finely diced cucumber (40g)
- 1/2 cup asian slaw mix with carrots (40g)
- 1/4 cup diced avocado (40g)
- 2 Tbsp Thai peanut sauce (31g)
- 1-2 Tbsp chopped salted peanuts
- 1 flour tortilla

Instructions

Microwave tortilla covered in a damp paper towel for 20-30 seconds to make more pliable.

Add avocado in a line down the center of the tortilla (smash a little if desired).

Add the cucumber, slaw mix, and chopped chicken. Then, drizzle peanut sauce over top. (Alternatively, if you prefer to have everything evenly coated in dressing, start by tossing all the ingredients in a bowl.)

Sprinkle chopped peanuts over top. Fold ends and roll up like a wrap. Serve along more peanut sauce and enjoy!
Notes
Make all at once or one at a time, as you’re ready to eat them, for the most fresh wraps.
If prepping wraps in advance, leave avocado off until ready to serve.
I like to go ahead and chop/prepare ingredients so all I have to do is throw on wrap when ready to eat!
