This batter mixes up to a beautiful rustic fall pumpkin color. Here’s how easy it is to make this protein muffin recipe:

  1. In a bowl, combine the dry ingredients: the flour, whey protein powder, pumpkin pie spice, baking soda, and salt.
  2. In a separate bowl, combine the wet ingredients: the pumpkin puree, brown sugar, eggs, oil, maple syrup, and vanilla; mix well. Pour the wet ingredients into the dry ingredients and mix until well incorporated.
  3. Divide the batter among 12 cups in a standard size muffin tin, placing about ¼ cup batter into each muffin cup. Smooth the batter slightly in each muffin cup with the back of a spoon or with a rubber spatula. Sprinkle chopped pumpkin seeds over the batter.
